Favorite Texas brewed beer? I assume that you mean one other than one I brew. It is still a tough question as my tastes change with the weather and what I am eating as well as the mood I am in.
Favorite non-Texas brewed beer? I am a sucker for going back to my home state of Wisconsin and getting some New Glarus beer.
Your favorite beer to brew and/or your favorite beer that you brew? I enjoy brewing the Circle Hook IPA and the Defying Gravity Double IPA. The hops always smell great when you add them to the boil, and it is fun just dumping pounds and pounds of hops in the kettle.
What beer styles or classifications do you feel could possibly be overlooked by local beer enthusiasts? I think there has been a lot of focus on the IPAs lately. While I enjoy the IPA as much as the next person, there is a lot to be said for some of the lighter and more delicate beers.
Describe a Bucket List setting or event where you hope to enjoy a beer one way? Maybe in one of the Trappist breweries, or the day I can hand my brewery over to one of my kids.
Describe your favorite setting or event which you have enjoyed a beer? It is a tie between the day we finished the first brew on the big system, and the one we had at the end of the shift the first day we opened. Both were long and fulfilling days.
The last and/or most interesting job you held before becoming a professional brewer. I was a chemist in the oil and gas industry for 10 years before we started BAKFISH.
Words of advice to anyone hoping to turn their passion of brewing and beer into a career. It is a lot more work than you think it is. There are many restless nights and long days.

Favorite perk of working in a brewery is I get to watch people come and enjoy my beer in a place that I built. It is one of the most fulfilling things a person can do.

If you had to start working in one other brewery starting tomorrow which brewery would it be and why? Any one that has air conditioning in the brewhouse!
